Looks like limestone with some chert lenses in the top picture, and since limestone will weather away while the chert just sits there not doing jack shit, it will be sticking out in relief on exposed surfaces where limestone dissolved like some sort of asshole. That's the bottom pic.

did some research on the quarry that's right there (Table Rock quarry #2), and found that they were quarrying Osagean series limestone. Osagean is a pretty broad category containing several formations seen here http://mrdata.usgs.gov/geology/state/sg ... y=36.69118
I looked at their references and the The Stratigraphic Succession in Missouri book I conveniently have right next to me! I know, fuckin nerd.
So, looking through the book I'm reading about the Reeds Spring Formation:
"...consists of alternating beds of dense, (big descriptive geology words here that mean nothing to normal people) gray or bluish gray limestone and bluish black to grayish white, nodular and irregularly bedded chert. The chert has a distinctive light-gray border. On weathered surfaces from which the limestone has been removed, a boxwork or lattice structure in the chert is exposed..."

You can pick by county, or what I did, statewide. Statewide tends to blow up your system though. Lots of data there.
