Like Crayfish? I dunno about you but I love 'em. I will happily use crayfish tails in any dish that typically calls for Shrimp, to delicious ends.
But as any connoisseur of Crayfish knows, frozen crawdads taste terrible. The meat does not stand up well to the freezing process.
In the James River just upstream from the bridge crossing Campbell between Springfield and Nixa is a great crawfish bed with some of the biggest ole bastards I've ever caught around here. Observe the image below for an example.
Of course the James River isn’t' amazingly clean downstream from town, so I wouldn't recommend eating these constantly or if you are a pregnant woman, but for the average healthy adult there isn't enough heavy metal in that water to cause any harm if you just eat them once in a while.
I strongly recommend picking up a pack of your favorite oriental stir fry mix from the store. Going to the river and catching about 20 of these crayfish. Boil them until they are almost cooked (cooked enough for the meat to pull out of the shell in once piece, but not so much that the meat dries out before the stir fry is done) peel out the tails, peel out the claws of the larger crawfish, and use that meat in your stir fry.

I think the river though is much cleaner than we give it credit for. Although for the life of me I just spent 20 min doing google searches and can't find any water quality reports to back that statement up.

Yeah cleaner than you think, people eat the fish and crawdads out of spfd lake, James, tablerock, and finley. Ive talked to a guy that worked at the James river power station, I asked him cautiously about eating fish out of there, he looked at me funny and said well yeah. The water is cleaner than everybody thinks. In one class I took we took a tour of the shit plant. I asked about the water quality of wilsons where they dump their clean water in and he said its as good as drinkable.... But j wouldn't try it.
I set a trap down there with tuna in some panty hose as ba it. I found some just as big as the one pictured aswell, I was hunting directly under the bridges.... Watch out for copper heads if you go! I saw 1. _________________ THE THREAD KILLER! |

See I saw that same site, but it doesn't mention anything about the crawdads being local, or comming from James River. They could be brought in from elsewhere.
Unless you are refering to some water quality information on that site, in which case I didn't find any the first time round, and I just scanned the page again and didn't see any. Turns out the upper size of a Longpincered Crayfish is about 8in, with 6 being the average. My hand is 7in long, and in that pic you can see if he were laid out flat he'd certainly be longer than my hand.
